Healthy Food Favorites Vegan Stew


1 onion, chopped

3 carrots, chopped

3 potatoes, chopped

1 turnip, chopped

1 parsnip, chopped

¼ cup couscous or brown rice

1 teaspoon ground black pepper

1 teaspoon salt

1 teaspoon ground cumin

2-1/2 cups water


  1. In a large pot over medium-high heat, combine onion, carrots, potatoes, parsnip, turnip, rice, pepper, cumin, salt and water. Boil until vegetables are tender, about 30 minutes, adding more water, if necessary. Makes 4 Servings
